Fresh oysters will remain alive for up to three to four days if kept cool temperatures below 10 degrees C.
To maintain freshness, you should divided them in small amounts and keep them in saltwater. You should also freeze them after 3 to 4 days.
Store them in the freezer with the saltwater without cleaning them with running freshwater. After the frozen oysters are thawed in the refrigerator, clean them once or twice with running freshwater to remove any dirt and debris before you cook them. We recommend you to avoid eating thawed raw oyster but to cook them.
