If you’re planning to eat them 2 to 3 days after purchase, sprinkle some salt on them, wrap them up with plastic wrap and keep them in the coolest part of the refrigerator. Live abalones can be served raw up to two days.
If you’re not planning to eat them right away, separate the meat and intestines from the shell, keep them separately and store them in the freezer. When abalones die, the intestines are the ones to go bad first so make sure you store them in the freezer right away.
1. Use a brush to clean the dirt and debris on the bottom part until you see the white meat.
2. Use a spoon to separate the meat from the shell and then, cut them into small pieces.
